Grape harvest with separate pressing for each variety. Cultivation in clay-limestone soils with pebbles that enhance minerality and optimize water retention during drought periods. A grape with an authentic taste of the land, standing out for its unique and distinctive character.
Initial fermentation in stainless steel tanks, followed by racking to separate sediments. The varieties are blended, sugar and yeast are added for a second fermentation in the bottle, with a 12-month aging process. Finally, clarification, disgorging, dosage, corking, cleaning, labeling, and packaging complete the process.
